Instructions

Making Banana Pudding Cake
  1. Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar with an electric mixer until light and fluffy.
  4. Add the eggs and vanilla extract and beat until well combined.
  5. Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients.
  6. Gently fold in the sliced bananas.
  7. Pour the batter into the prepared baking dish and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. While the cake is baking, prepare the pudding by combining the instant vanilla pudding mix with 2 cups of cold milk. Beat with an electric mixer for 2 minutes or until thickened.
  9. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. When the cake is done baking, remove it from the oven and let it cool in the pan for 10 minutes.
  11. Using the end of a wooden spoon, poke holes all over the top of the cake. Pour the pudding over the cake and spread it evenly. Let the cake cool completely.
  12. Once the cake is cool, spread the whipped cream over the top of the pudding layer. Arrange vanilla wafers on top of the whipped cream. Serve immediately or refrigerate until ready to serve.
